Andrea “Guido” Falaschi

Guest Butcher

Macelleria Falaschi

The butcher's shop, Macelleria Falaschi, open since 1925, is located in the historic center of the city of San Miniato, halfway between Pisa and Florence, in the Tuscan countryside. Historic home of four generations of butchers, it has always offered fresh meat from local farms of beef, pork, sheep and white meat, cured meats and gastronomy of its own production

Sergio Falaschi, together with his son Andrea and daughter Anna, represent the third and fourth generation of “Master Butchers” from San Miniato. An adventure that began way back in 1925 when Guido Falaschi opened the first family butcher shop in San Miniato. The baton then, over time, passed to his sons Vasco and Bruno, respectively father and uncle of Sergio who in 1967 took over the reins of the company. A job that of the artisan of meat, carried forward with enthusiasm by Sergio and his son Andrea, respecting ancient traditions, rules and processing methods. An important choice, even if difficult, was to have a direct line between the breeder and the processor in order to have certain traceability of the product with a more than short supply chain
